This thesis is focused on the use of NIR spectroscopy for quality control of dairy products. It describes the measuring principle, measuring equipment and methods for evaluation of measured spectra. The following section describes the legislation, quality control of dairy products. There is also treated review of literature on the use of NIR spectroscopy for the determination of milk and dairy products for the analysis of the ingredients and the detection of adulteration of these products. There are describe the practical appli-cations of measuring the quality of dairy products.
Somatické buňky v mléce a jejich vliv na technologické vlastnosti mléka

This bachelor thesis is focused on somatic cells and their effect on processing of dairy products. Somatic cells are indicators of healthy mammary gland. This thesis describes origin, type of somatic cells and components, that effects their quantity. Somatic cells are basic elements in diagnostics of some diseases, primarily diagnostics of mastitis and metabolic disorders. Mastitis is inflammation of the mammary gland and it´s the most frequent and the most significant disease of mammary gland. Somatic cells are indicators of state of health of metabolic disorders, primarily acidosis, alkalosis and ketosis. These diseases induce deterioration of milk and changes in it´s composition. This cause worse processability of milk for dairy products.

The diploma thesis focuses on the description of characteristic changes caused by the development of agribusiness and some other specifics within the framework of shaping of the business environment of Czech agricultural ventures. From this point of view we can observe the situation of Czech agriculture before and after the Czech republic´s entrance to the European union, which necessitated the implementation of the common agricultural policy Czech law, and how this act affected Czech farmers, with an emphasis on the dairy sector. The theoretical background in the next part of the thesis demonstrates the capture of the development of commodity chain of milk in the conditions of the Czech Republic, where it focuses on the position of agricultural ventures and the basic factors determining the success of the primary producers. Following these general contexts, the possibility of the involvment of small family farms intending to enter the milk market and market of dairy products from different segments of business activity was also assessed. Results show us that even smaller farms, if they choose a suitable strategy, can be successful.

Možnosti zapojení zemědělského podniku do komoditní vertikály mléka

This thesis focuses on characteristic changes caused by expansion of agribusiness and some shaping specifics of Czech farms and business environment which were caused by the transformation processes and the Czech Republic's accession to the European Union. The thesis also describes the developement of milk commodity chain in the Czech Republic, discusses the farm status in it and also fundamental factors determining the success of primary production. Based on the results, the thesis also deals with the elimination of dependence of one specific farm on followup subjects. The main part of the thesis is a business plan of independent processing of farm milk production. The results show that independent processing of farm production is one of the suitable possibilities nowadays, how to keep the viability of small and medium sized farms.

GEROČOVÁ, L.: Economic context of development of the dairy industry in CR. Mendel University in Brno, 2014. Master thesis. This diploma thesis deals with the development of economic relations in the dairy sector in Czech Republic. Text contributes to a deeper understanding of the factors that shape the business environment of agribusiness in a globalizing context and assesses these general trends in the dairy industry. Generally, milk production has decreased, as well as there was a significant reduction in the number of dairy cows. Consumption of dairy products in recent years is slightly increasing. Analysis of the demand-oriented approach shows insufficient adaptation of domestic production with consumer requirements. This creates space for the import of processed products with higher added value. There is a growing positive balance of international trade in milk and the negative balance in cheese and butter. The development of price levels shows that dairy producers is within the verticals in difficult position, when the price margin is pushed by power position of retailers. Economic analysis of the sample firms indicates a positive development of the dairy industry. Comparison of findings through interviews with representatives of Madeta and Moravia Lacto suggests conclusions from the view of the similarities and differences in orientations and business strategies. Analysis of sector and companies economic indicators shows considerable volatility in the last decade. The future development will be crucial by using opportunities, ability to respond to global changes in population and demand, changes in the market price and, ultimately, the focus and instruments of the Common Agricultural Policy.
